Today's recipe: Healthy vegetarian soup (using leftovers)
Take any roast vegetables that are leftover. OR cut 2 carrots, 2 tomatoes, 1 courgette or bouttle gourd.
Saute in a pan with a little olive oil, add vegetable stock to cover.
Add leftover quinoa or leftover red rice or leftover brown rice. Leftover lentils can also be added.
Cook till all vegetables are soft.
Blend in the liquidiser or using a stick blender.
Season to taste and serve.
Todays recipe: Three bean salad
Take one can each of kidney beans, chick peas and sweetcorn and add to a bowl.
Add some finely chopped onion.
Add some finely chopped cucumber.
Add some finely chopped tomato.
Add a handful of chopped coriander.
Add some olive oil, white wine vinegar and salt and chilli powder.
An easy vegetarian recipe that can be taken for packed lunch or picnics.

Today's recipe: Stuffed potatoes
Boil 4 potatoes whole for 20 mins or until cooked through till soft but skins still in tact.
Let the potatoes cool down.
Cut in half along long side and scoop out all the flesh, keeping the skin in tact to form shells or cases
Mash all the scooped out flesh with some melted butter.
Add some grated cheese, finely chopped onions and finely chopped chillies to the mix.
Brush the outside of the skins/shells with some olive oil and lay flesh side up on a baking tray
Put the potato mash mixture into each shell and press down.
Grill in a hot oven till the tops are nicely browned.
Today's recipe: Israeli couscous salad
Cook a cup of Israeli couscous in double the amount of water.
Once the couscous is cool, add the following:
- handful of pomegranate seeds
- a tablespoon of finely chopped parsley
- half a finely sliced onion
- one finely sliced cucumber.
Toast some pine nuts in a non-stick frying pan and add to the salad.
